Directions
Equipment needed: 9x5 loaf pan, parchment paper and cooking spray.
Preheat oven to 350 degrees. Spray a 9x5 inch loaf pan with non-stick cooking spray and line with parchment paper. The cooking spray will help hold the parchment paper in place as well as keeping the bread from sticking to the parts that aren't covered with parchment paper.
Make Topping. In a medium bowl combine 1/4 cup cold 1/2-inch diced butter, 2/3 cup brown sugar, 1/2 teaspoon of both cinnamon and nutmeg. Cut butter in with a pastry cutter until mixture resembles a course meal. Set aside.
In a large bowl, beat with a handheld electric mixer 1/2 cup butter, 2/3 cup sugar, 2 eggs, 1 teaspoon vanilla. Mix well then add 1/2 cup milk. Set aside. In a medium bowl whisk together 1 1/2 cups all-purpose flour, 2 teaspoons baking powder and 1/2 teaspoon salt. Next add the flour mixture to the wet ingredient's mixture and mix with a handheld electric mixer.
Peel core and thinly slice 2-3 apples. Pour half of the batter into the bottom of prepared loaf pan.
Layer on top of the batter, half of the cinnamon topping.
Layer on top of cinnamon topping a layer of sliced apples.
Repeat process. 1st layer batter then 2nd layer cinnamon crumble topping, 3rd layer apples on top.
Bake for 50-60 minutes or until a toothpick inserted comes out clean.
Allow to completely cool before icing. After 15-20 minutes of cooling, gently remove bread from loaf pan and place on a cooling rack.
Make icing, combine 1/4 cup of confectioners' sugar and 1 1/2 teaspoons of cold milk. Drizzle on bread. Allow icing to set up before slicing.
Slice and enjoy!
